Ingredients

  • For the Dough:
  • 2 cups (250 g) all-purpose flour
  • 3/4 cup (170 g) cold unsalted butter, cubed
  • 1/3 cup (65 g) granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • Zest of 1 medium lemon
  • 1/4 teaspoon salt
  • For the Filling:
  • 1 3/4 cups (420 g) apricot jam (or jam of choice)
  • For Garnish:
  • 12 tablespoons powdered sugar (optional)

Instructions

  1. In a large bowl or stand mixer, combine flour, cold butter, sugar, lemon zest, and salt. Mix until the texture resembles coarse crumbs.
  2. Add the egg, egg yolk, and vanilla extract. Mix just until a smooth dough forms. Avoid overmixing.
  3. Shape dough into a disk, wrap tightly, and refrigerate for at least 30 minutes.
  4. Preheat oven to 350°F (177°C) and lightly grease a 9-inch tart pan.
  5. Roll out two-thirds of the dough to 1/8-inch thickness. Transfer to the tart pan and press into the bottom and sides. Trim excess.
  6. Spread jam evenly over the crust, leaving a small border.
  7. Roll out remaining dough and cut into 1/2-inch strips. Arrange in a lattice pattern over the jam and press edges gently.
  8. Bake for 32–34 minutes until golden brown and jam is slightly bubbling.
  9. Cool completely before removing from the pan. Dust with powdered sugar before serving.
