Ingredients

  • 2 cups soft Medjool dates, pitted (about 12 to 14 large dates)
  • 1 cup rolled oats
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup chopped walnuts or almonds
  • 2 tablespoons unsweetened shredded coconut
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 to 2 tablespoons warm water, as needed
  • 2 tablespoons unsweetened cocoa powder (for coating)
  • 2 tablespoons unsweetened shredded coconut (for coating)
  • 2 tablespoons finely chopped nuts (for coating)

Instructions

  1. Add pitted dates to a food processor. If dry, soak in warm water for 10 minutes and drain.
  2. Add oats, cocoa powder, nuts, shredded coconut, coconut oil, vanilla extract, and salt.
  3. Process until the mixture becomes sticky and clumps together. Add warm water gradually if needed.
  4. Scoop about 1 tablespoon of mixture and roll into a ball.
  5. Roll each truffle in cocoa powder, shredded coconut, or chopped nuts.
  6. Place on a tray and chill in the refrigerator for 20–30 minutes to firm up.
  7. Serve chilled or at room temperature.

Notes

  • Soften dry dates by soaking before blending.
  • Add chia seeds or flaxseed for extra nutrition.
  • Enhance flavor with cinnamon, espresso powder, or orange zest.
  • Swap nuts with seeds for a nut-free version.
  • Store in the fridge for up to 1 week or freeze for up to 2 months.
  • If mixture is too sticky, chill or add oats or cocoa powder.
