Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons halal powdered gelatin
  • 3 tablespoons cold water
  • Pinch of salt

Instructions

  1. In a small bowl, sprinkle the halal gelatin over cold water and let it bloom for 5–7 minutes.
  2. In a saucepan, combine heavy cream, milk, sugar, and salt over medium heat. Stir until sugar is dissolved and mixture is hot but not boiling.
  3. Remove from heat and add the bloomed gelatin. Stir until fully dissolved.
  4. Stir in vanilla extract.
  5. Pour the mixture into ramekins or serving glasses.
  6. Let cool slightly at room temperature, then cover and refrigerate for at least 4 hours or until set.
  7. Serve chilled, either in the containers or unmolded onto plates if desired.

Notes

  • Do not boil the cream mixture; it should only be heated until hot and sugar is dissolved.
  • To unmold, dip the ramekin in warm water for a few seconds and invert onto a plate.
  • Vanilla bean can be used in place of extract for a more intense flavor.
  • Best served chilled with fruit, syrup, or a light sauce.
