Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups milk
  • 1/2 cup sparkling water
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter or oil (plus extra for cooking)

Instructions

  1. In a bowl, whisk together eggs, milk, sparkling water, sugar, salt, and vanilla extract until smooth.
  2. Gradually whisk in flour until the batter is thin and lump-free.
  3. Stir in melted butter or oil and let the batter rest for 15–20 minutes.
  4. Heat a non-stick pan over medium heat and lightly grease it.
  5. Pour a small amount of batter into the pan and swirl to coat evenly.
  6. Cook for 1–2 minutes until lightly golden, then flip and cook another 30–60 seconds.
  7. Transfer to a plate and repeat with remaining batter.
  8. Fill with desired sweet or savory fillings, then roll or fold and serve.
