Ingredients

  • 1/2 cup almond flour
  • 2 tablespoons coconut oil, divided
  • 3 tablespoons natural peanut butter (no sugar added)
  • 3 tablespoons Swerve confectioners sugar substitute
  • 1/2 teaspoon vanilla extract
  • 1/4 cup peanuts, roughly chopped
  • 1/4 cup sugar-free chocolate baking chips
  • Optional: crushed peanuts and a pinch of sea salt for topping

Instructions

  1. In a medium bowl, mix almond flour, 1 tablespoon melted coconut oil, peanut butter, Swerve, vanilla extract, and chopped peanuts until a soft dough forms.
  2. Scoop mixture and roll into about 12 evenly sized balls.
  3. Place balls on a wax paper–lined tray and freeze for 30 minutes until firm.
  4. Melt remaining 1 tablespoon coconut oil with sugar-free chocolate chips in 20-second microwave intervals, stirring until smooth.
  5. Dip each frozen ball into melted chocolate, coating completely. Let excess drip off.
  6. Place back on wax paper and sprinkle with crushed peanuts and sea salt if desired.
  7. Freeze for 15–20 minutes until chocolate shell is fully hardened.
  8. Store in refrigerator or freezer until ready to serve.
