Ingredients

  • 1 1/4 pounds ground beef
  • 1/2 small onion, diced
  • 2 garlic cloves, minced
  • 1 small head green cabbage, chopped (about 6 cups)
  • 1 can diced tomatoes with green chilies (10 ounces)
  • 1 can tomato sauce (8 ounces)
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon keto-friendly granulated sweetener
  • 1 1/2 cups cauliflower rice
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook for 2–3 minutes until softened.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.
  5. Season with Italian seasoning, paprika, salt, and black pepper.
  6. Add chopped cabbage and stir well until it begins to wilt.
  7. Pour in diced tomatoes, tomato sauce, tomato paste, apple cider vinegar, and sweetener. Stir to combine.
  8. Cover and cook for about 10 minutes, stirring occasionally, until cabbage is tender.
  9. Add cauliflower rice and cook uncovered for 5–7 minutes until heated through and slightly thickened.
  10. Taste and adjust seasoning, then garnish with fresh parsley before serving.
