Ingredients

  • 400 g (about 4 packed cups) sponge cake or pound cake, cut into 2 cm cubes
  • 2 cups (480 ml) cold heavy whipping cream
  • 3 tablespoons (25 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup (150 g) fresh strawberries, hulled and sliced
  • 1 cup (165 g) fresh mango or peach chunks
  • 2 medium kiwis (about 1 cup / 150 g), peeled and sliced
  • 1/2 cup (60 g) fresh raspberries
  • 1/2 cup (75 g) fresh cherries, pitted and halved (or mixed berries)
  • 1/2 cup (160 g) fruit jam or fruit glaze (optional)

Instructions

  1. In a large mixing bowl, whip the cold heavy cream with powdered sugar and vanilla extract until soft, fluffy peaks form. Set aside in the refrigerator.
  2. Place a single layer of cake cubes evenly across the bottom of a glass trifle dish or serving bowl.
  3. Spread a generous layer of whipped cream over the cake cubes, smoothing the top with a spatula.
  4. Add a mixed layer of strawberries, mango or peach, kiwi, raspberries, and cherries.
  5. If using, spoon a small amount of fruit jam or glaze over the fruit for added sweetness and shine.
  6. Repeat the layers in the same order: cake cubes, whipped cream, fruit, and optional jam, until all ingredients are used.
  7. Finish with a final layer of whipped cream and decorate the top with neatly arranged fresh fruit.
  8. Cover the dish and chill in the refrigerator for at least 1 hour before serving to allow the flavors to meld.
