Ingredients

  • 1 box (15.25 ounces) yellow cake mix
  • 1 can (20 ounces) crushed pineapple with juice
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 8 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, combine yellow cake mix, crushed pineapple with juice, eggs, and vegetable oil. Mix until fully combined.
  3. Pour batter into prepared baking dish and smooth the top evenly.
  4. Bake for 30–35 minutes, or until golden and a toothpick inserted into the center comes out clean. Cool completely in the pan.
  5. In a medium bowl, beat softened cream cheese until smooth. Gradually add powdered sugar and mix until creamy. Stir in vanilla extract.
  6. Spread frosting evenly over the cooled cake.
  7. Sprinkle chopped pecans on top if desired.
  8. Slice and serve.

Notes

  • Do not drain the pineapple; use the full can with juice for proper moisture.
  • Store covered in the refrigerator for up to 5 days.
  • Allow cake to sit at room temperature 15–20 minutes before serving for best texture.
  • Freeze unfrosted cake up to 2 months; thaw before frosting.
  • Pecans are optional and can be omitted for a nut-free version.
