Ingredients

  • 1 cup plain Greek yogurt (2% or full-fat)
  • 1/2 cup fresh or frozen blueberries
  • 1 scoop (about 30 g) vanilla or unflavored protein powder
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp lemon zest
  • 12 tbsp honey, maple syrup, or zero-calorie sweetener (to taste)
  • 1/4 tsp vanilla extract (optional)
  • Pinch of salt
  • Optional: 2–3 tbsp whipped cream or coconut cream for extra fluffiness

Instructions

  1. Add Greek yogurt, blueberries, protein powder, lemon juice, lemon zest, sweetener, vanilla extract (if using), and salt to a blender or food processor.
  2. Blend until smooth and creamy.
  3. If using, gently fold in whipped cream or coconut cream for added fluffiness.
  4. Transfer mousse into small jars or bowls and refrigerate for at least 1 hour to set.
  5. Serve chilled, garnished with extra blueberries or lemon zest if desired.

  • Use frozen blueberries straight from the freezer for a thicker texture.
