Ingredients

1 cup all-purpose flour

3/4 cup granulated sugar

1/4 tsp salt

1/2 cup unsalted butter, softened

2 large eggs

2 tbsp lemon zest

2 tbsp lemon juice

1/2 tsp vanilla extract

1/2 cup powdered sugar (for glaze)

1 tbsp lemon juice (for glaze)

1 tsp lemon zest (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Cream together softened butter and sugar in a large bowl until light and fluffy.
  3. Beat in eggs one at a time, then add lemon juice, zest, and vanilla extract.
  4. Stir in flour and salt just until combined—do not overmix.
  5. Pour batter into the prepared pan and smooth it evenly.
  6. Bake for 22–25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the brownies cool completely in the pan.
  8. For the glaze, whisk together powdered sugar, lemon juice, and zest until smooth.
  9. Spread glaze over cooled brownies and chill for 15 minutes to set.
  10. Slice into bars and serve.

Notes

  • Use fresh lemon juice for best flavor, though bottled can be used in a pinch.
  • Chilling the bars after glazing helps achieve clean, neat slices.
  • Can be made gluten-free using a 1:1 gluten-free flour blend.
  • Optional add-ins include berries, poppy seeds, or cream cheese in the glaze.
