Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • 2 tablespoons olive oil
  • 2 garlic cloves, finely minced
  • Juice of 1 medium lemon (about 3 tablespoons)
  • 1 medium lemon, thinly sliced
  • 2 tablespoons capers, rinsed and drained
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 2 tablespoons fresh parsley, finely chopped (for garnish)

Instructions

  1. Pat chicken breasts dry with paper towels and season both sides with salt and black pepper.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chicken breasts and cook for 5–7 minutes per side until golden brown and fully cooked. Remove from skillet and set aside.
  4. In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
  5. Pour in lemon juice, add lemon slices and capers, and simmer for 2–3 minutes, scraping up browned bits from the pan.
  6. Return chicken to the skillet and spoon sauce over the top. Cook for another 2 minutes until heated through.
  7. Remove from heat, garnish with chopped parsley, and serve immediately.

Notes

  • For a richer sauce, add 1/4 cup chicken broth while simmering.
  • Stir in lemon zest for extra brightness.
  • Boneless chicken thighs can be used instead of breasts.
  • Pair with rice, pasta, or mashed potatoes for a full meal.
  • Rinse capers to reduce saltiness.
