Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • 2 tablespoons finely chopped fresh parsley
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons minced garlic
  • ½ medium lemon, juiced (about 2 tablespoons)

Instructions

  1. In a small bowl, mix oregano, basil, parsley, salt, and pepper. Toss the chicken pieces in this seasoning blend until evenly coated.
  2. Heat a 12-inch skillet over medium heat and melt 2 tablespoons of butter, swirling to coat the bottom.
  3. Add the seasoned chicken in a single layer. Cook for 8–10 minutes, flipping halfway through, until golden brown and cooked through.
  4. Reduce heat to medium-low. Add remaining 2 tablespoons of butter and the minced garlic. Cook for 30 seconds until fragrant.
  5. Pour in the lemon juice and stir to coat the chicken. Cook for another 1–2 minutes until the sauce slightly thickens.
  6. Remove from heat and serve immediately while hot.
