Ingredients

  • 2 cups all-purpose flour, sifted
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup icing sugar, sifted
  • 1/3 cup light olive oil
  • 1/2 cup fresh lemon juice
  • Zest of 2 lemons
  • 1/2 teaspoon vanilla bean paste
  • 1 large egg, room temperature
  • Lemon Drizzle:
  • 1 cup icing sugar
  • 1/2 tablespoon fresh lemon juice
  • Fresh lemon zest, for garnish

Instructions

  1. Preheat oven to 180°C (350°F). Line two baking trays with parchment paper and lightly grease with olive oil.
  2. In a medium bowl, sift together flour, baking powder, and salt. Set aside.
  3. In a large bowl, whisk together icing sugar, olive oil, lemon juice, and lemon zest until smooth and pale.
  4. Add egg and vanilla bean paste, mixing until fully combined.
  5. Gradually add dry ingredients in three parts, mixing gently after each until a thick batter forms.
  6. Lightly oil hands. Scoop 1 teaspoon of dough, roll into a ball, and place on prepared tray. Repeat with remaining dough, spacing cookies slightly.
  7. Bake for 15–16 minutes until set but still pale. Cool completely on a wire rack.
  8. For drizzle, mix icing sugar and lemon juice until pourable. Spoon over cooled cookies and garnish with lemon zest.
