Ingredients

  • 300 g tortilla chips
  • 250 g ground beef
  • 1 tablespoon olive oil (for beef)
  • 1 teaspoon garlic powder (for beef)
  • 1 teaspoon onion powder
  • 1 teaspoon paprika (divided)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt (divided)
  • 1/4 teaspoon black pepper (divided)
  • 250 g raw shrimp, peeled and deveined
  • 1 tablespoon olive oil (for shrimp)
  • 1/2 teaspoon garlic powder (for shrimp)
  • 200 g shredded cheddar or mozzarella cheese
  • 1/2 cup diced tomatoes
  • 1/2 cup cooked sweet corn
  • 1/2 cup sliced black olives
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley or coriander
  • 1/2 cup sour cream (optional)
  • 1/2 cup mild chili sauce or halal nacho sauce (optional)

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. In a skillet, heat 1 tbsp olive oil over medium heat. Add ground beef and cook for 5–7 minutes, breaking apart. Season with garlic powder, onion powder, paprika, cumin, 1/4 tsp salt, and 1/8 tsp pepper. Cook until browned, then remove from heat.
  3. In another pan, heat 1 tbsp olive oil over medium heat. Add shrimp and season with 1/2 tsp paprika, 1/2 tsp garlic powder, 1/4 tsp salt, and 1/8 tsp pepper. Cook 2–3 minutes per side until opaque. Remove from heat.
  4. Spread tortilla chips on the baking tray. Sprinkle half of the cheese over the chips.
  5. Evenly distribute the cooked beef and shrimp over the chips. Top with remaining cheese.
  6. Bake for 8–10 minutes until cheese is melted and bubbly.
  7. Remove from oven and top with diced tomatoes, corn, olives, red onion, and herbs.
  8. Drizzle with sour cream and chili or nacho sauce if using. Serve immediately.
