Ingredients

  • 4 chicken leg quarters
  • 1/3 cup pure maple syrup
  • 1/4 cup freshly squeezed orange juice
  • 2 tablespoons soy sauce
  • 2 teaspoons olive oil
  • 1 tablespoon Dijon mustard
  • 2 garlic cloves, minced
  • 1 teaspoon orange zest
  • 1/2 teaspoon crushed red chili flakes
  • Fresh thyme sprigs
  • Salt and freshly ground black pepper, to taste
  • Orange slices, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease it.
  2. In a medium bowl, whisk together maple syrup, orange juice, soy sauce, olive oil, Dijon mustard, garlic, orange zest, and red chili flakes until well combined.
  3. Pat chicken leg quarters dry and season with salt and pepper.
  4. Place chicken in the baking dish and pour glaze over it, turning to coat. Add thyme sprigs and orange slices. Let marinate for 20 minutes if time allows.
  5. Roast in the oven for 45–50 minutes, basting once or twice with pan juices.
  6. Check doneness with a meat thermometer; internal temperature should reach 165°F (74°C).
  7. Remove from oven, spoon pan glaze over chicken, and garnish with fresh thyme and orange slices before serving.
