Ingredients

  • 4 heaping cups Brussels sprouts, trimmed and halved (about pounds)
  • 3 tablespoons olive oil
  • Kosher salt, to taste
  • 2 tablespoons maple syrup
  • ¼ cup dried cranberries
  • ¼ cup goat cheese, crumbled (about 2 ounces)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the ends off the Brussels sprouts and cut them in half lengthwise. Remove any discolored outer leaves.
  3. Place the sprouts on a large baking sheet. Drizzle with olive oil and sprinkle with kosher salt. Toss to coat and arrange in a single layer, cut side down.
  4. Roast for 20 minutes, until the edges begin to brown and crisp.
  5. Remove from the oven, drizzle with maple syrup, and toss gently to coat.
  6. Return to the oven and roast for an additional 5–10 minutes, until golden and caramelized.
  7. Transfer to a serving platter. Sprinkle with dried cranberries and crumbled goat cheese.
  8. Serve immediately while warm.

Notes

  • Use pure maple syrup for best flavor—avoid artificial pancake syrup.
  • Spread sprouts in a single layer to ensure even roasting and crispness.
  • Add goat cheese and cranberries just before serving to maintain texture.
  • To make it vegan, use plant-based cheese or omit cheese and add nuts.
  • To reheat, bake in oven at 350°F for 10 minutes to restore crispness.
