Ingredients

  • 12 ounces (340 g) high-quality white chocolate, finely chopped
  • 1 teaspoon matcha green tea powder, sifted
  • 1/2 cup freeze-dried raspberries, lightly crushed
  • 1/2 cup unsweetened shredded coconut
  • Parchment paper, for lining the pan

Instructions

  1. Line a baking tray with parchment paper and set aside.
  2. Bring 1 inch of water to a gentle simmer in a small saucepan over medium heat.
  3. Place a heatproof bowl over the saucepan (without touching the water) and add 9 oz of chopped white chocolate.
  4. Stir frequently until melted and heated to 100–110°F (38–43°C), then remove from heat.
  5. Add remaining 3 oz of chopped chocolate and stir until smooth.
  6. Sift in the matcha powder and stir until fully blended and uniformly green.
  7. Fold in half of the crushed raspberries and half of the shredded coconut.
  8. Spread the mixture into a 10 x 10 inch square on the prepared tray.
  9. Sprinkle remaining raspberries and coconut evenly over the top and press gently to adhere.
  10. Let set at room temperature for 2 hours or refrigerate for 20 minutes until firm.
  11. Break or cut into pieces and serve at room temperature.
