Ingredients

  • Meatloaf:
    • 1 lb ground beef (85–90% lean)
    • 1/2 cup breadcrumbs
    • 1/3 cup milk
    • 1 small onion, finely diced
    • 1 egg
    • 2 tbsp ketchup
    • 1 tbsp Worcestershire sauce (halal)
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1/2 tsp paprika
    • 1 tsp salt
    • 1/2 tsp black pepper
  • Meatloaf Glaze:
    • 1/4 cup ketchup
    • 1 tbsp brown sugar
    • 1 tsp mustard
  • Loaded Mashed Potatoes:
    • 2 lbs potatoes, peeled and cubed
    • 4 tbsp butter
    • 1/2 cup milk
    • 1/3 cup sour cream
    • 1 cup shredded cheddar cheese
    • 1/4 cup chopped green onions
    • Salt and pepper to taste
  • Corn:
    • 2 cups sweet corn kernels (fresh, frozen, or canned)
    • 1 tbsp butter
    • Salt and pepper to taste
  • Green Beans:
    • 12 oz fresh green beans, trimmed
    • 1 tbsp olive oil
    • 1 garlic clove, minced
    • Salt and pepper to taste

Instructions

  1. Make the Meatloaf: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or grease a loaf pan. Mix breadcrumbs with milk and let sit 3 minutes. Add remaining meatloaf ingredients and mix gently. Form into a loaf. Mix glaze ingredients and spread over top. Bake 55–60 minutes, or until internal temp reaches 160°F (71°C). Rest 10 minutes before slicing.
  2. Prepare Mashed Potatoes: Boil potatoes in salted water for 12–15 minutes until fork-tender. Drain and mash with butter, milk, and sour cream. Stir in cheese and green onions. Season to taste.
  3. Cook the Corn: Heat butter in a skillet over medium heat. Add corn and cook 3–4 minutes. Season with salt and pepper.
  4. Cook Green Beans: Heat olive oil in a pan. Add green beans and sauté for 5–6 minutes. Add garlic and cook 1 minute more. Season with salt and pepper.
  5. Serve: Slice the rested meatloaf and serve with mashed potatoes, corn, and green beans. Enjoy!

  • Use halal Worcestershire sauce to keep the dish halal-friendly.
  • Do not overmix the meatloaf — mix until just combined to keep it tender.
