Ingredients

  • 1 lb (450 g) boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon fine salt
  • 1/2 teaspoon black pepper
  • Juice of 1 medium lemon (about 2 tablespoons)
  • 1 cup cooked rice, couscous, or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 cup Kalamata olives, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons tzatziki sauce (optional)
  • 2 tablespoons fresh parsley or mint, chopped

Instructions

  1. In a bowl, combine olive oil, garlic, oregano, paprika, salt, pepper, and lemon juice. Add chicken and mix well. Marinate for 15–30 minutes.
  2. Heat a skillet or grill pan over medium-high heat. Cook chicken for 5–7 minutes per side until golden and internal temperature reaches 165°F (74°C). Let rest 5 minutes, then slice.
  3. Divide grains into serving bowls. Top with sliced chicken, cherry tomatoes, cucumber, olives, red onion, and feta.
  4. Add tzatziki sauce if using and sprinkle with parsley or mint. Serve immediately.
