Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 boneless, skinless chicken breasts
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/4 cup chopped parsley
  • 2 tablespoons chopped mint
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, basil, thyme, salt, and pepper.
  2. Place the chicken breasts in a zip-top bag and pour in the marinade. Seal and refrigerate for at least 30 minutes or up to overnight.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess. Grill the chicken for 6–8 minutes per side, or until the internal temperature reaches 165°F (74°C). Let rest before slicing.
  4. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, olives, lemon juice, olive oil, parsley, mint, salt, and pepper. Toss to combine.
  5. Serve the grilled chicken alongside or on top of the quinoa salad.
