Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup honey
  • 1/2 cup fresh or dried cranberries
  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease or line a baking dish with parchment paper.
  2. Place the chicken breasts in the baking dish. Season both sides with salt, pepper, oregano, and thyme.
  3. In a small bowl, whisk together honey, olive oil, minced garlic, and lemon juice. Stir in the cranberries.
  4. Pour the honey-cranberry mixture evenly over the chicken breasts.
  5. Cover the baking dish with foil and bake for 25–30 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Remove the foil and bake for an additional 5–10 minutes to allow the glaze to thicken slightly.
  7. If using feta cheese, sprinkle it over the chicken during the last 2 minutes of baking.
  8. Garnish with fresh parsley and serve warm.
