Ingredients

  • 1 cup fresh spinach, washed, thoroughly dried, and finely chopped

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly coat with olive oil spray.
  2. In a medium bowl, combine chopped spinach, feta, Parmesan, flour, garlic powder, oregano, salt, and black pepper.
  3. Add beaten eggs and mix thoroughly until a thick batter forms.
  4. Scoop tablespoon-sized portions onto the prepared baking sheet and flatten gently into rounds about 2–3 inches wide.
  5. Lightly spray the tops with olive oil spray.
