Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 medium yellow onion, chopped
  • 1 green bell pepper, cored, seeded, and chopped
  • ½ teaspoon kosher salt, plus more to taste
  • 2 vine-ripe tomatoes, chopped
  • 3 tablespoons tomato paste
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano
  • 1 teaspoon Aleppo pepper, plus more for finishing
  • 4 large eggs, beaten
  • A pinch of crushed red pepper flakes (optional)
  • Thick slices of crusty bread for serving (optional)

Instructions

  1. Heat the olive oil in a 10-inch skillet over medium heat. Add the chopped onion and green pepper. Season with a pinch of kosher salt. Cook for 4–5 minutes, stirring often, until softened but not browned.
  2. Add the chopped tomatoes and tomato paste. Season with more kosher salt, black pepper, dried oregano, and Aleppo pepper. Cook for 5–7 minutes over medium heat until the tomatoes soften but still hold some shape.
  3. Push the tomato mixture to one side of the skillet. Reduce the heat to medium-low and pour the beaten eggs into the empty side of the pan. Cook gently, stirring occasionally, until the eggs are just set.
  4. Fold the tomato mixture into the eggs, mixing briefly to combine without overcooking.
  5. Remove from heat immediately. Finish with a drizzle of olive oil, more Aleppo pepper, and crushed red pepper flakes if desired.
  6. Serve warm with thick slices of crusty bread.

  • Crumbled feta adds creaminess if stirred in just before serving.
