Ingredients

  • lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp taco seasoning
  • ½ tsp paprika
  • 6 oz full-fat cream cheese, softened
  • 1 cup keto-friendly salsa
  • 1 cup full-fat sour cream
  • 2 cups freshly shredded cheddar cheese
  • 1 cup Monterey Jack cheese, freshly shredded
  • Jalapeño slices, optional for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish and set aside.
  2. In a large skillet over medium heat, heat the olive oil and cook the chopped onion until soft and translucent.
  3. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  5. Season with salt, pepper, taco seasoning, and paprika. Stir to combine.
  6. Lower the heat and stir in the cream cheese until fully melted and blended into the meat.
  7. Add salsa and sour cream. Stir until creamy and well combined.
  8. Remove from heat and mix in half of the shredded cheddar and Monterey Jack cheese.
  9. Transfer the mixture into the prepared baking dish and spread evenly.
  10. Top with the remaining cheese.
  11. Bake uncovered for 30 minutes, until bubbly and lightly golden on top.
  12. Let rest for 5 minutes before serving. Garnish with jalapeño slices if desired.
