Ingredients

  • 2 tablespoons (28 g) unsalted butter, melted
  • 1 tablespoon (15 g) light brown sugar
  • 2 teaspoons (≈10 ml) whole milk
  • ½ teaspoon vanilla extract
  • ⅓ cup (≈39 g) all-purpose flour
  • ¼ teaspoon baking powder
  • ⅛ teaspoon salt (omit if using salted butter)
  • 2 tablespoons (≈12 g) quick oats
  • 2 tablespoons (≈16 g) semisweet chocolate chips

Instructions

  1. In a small mixing bowl, whisk together melted butter, brown sugar, milk, and vanilla extract until smooth and sugar is dissolved.
  2. Add flour, baking powder, and salt. Stir to form a soft, slightly sticky dough.
  3. Fold in the quick oats and chocolate chips.
  4. Transfer the dough into a 6-ounce ramekin or microwave-safe mug.
  5. Microwave on high for 40 seconds. If the top isn’t set, microwave an additional 10 seconds (do not exceed 1 minute).
  6. Let cool for 10 minutes to allow it to firm up slightly.
  7. Serve warm and enjoy immediately.

Notes

  • Use raisins instead of chocolate chips for an oatmeal-raisin version.
  • Add chopped nuts or swirl in peanut butter for extra richness.
  • Use plant-based milk, dairy-free butter, and chocolate chips for a dairy-free version.
  • Substitute gluten-free flour and certified GF oats for gluten-free needs.
  • Best enjoyed fresh; reheating may dry it out.
