Ingredients

  • 2 lbs boneless skinless chicken thighs, cut into -inch pieces
  • 1 cup plain whole milk yogurt
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground cinnamon
  • 1 tablespoon tomato paste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large bowl, whisk together yogurt, olive oil, lemon juice, garlic, tomato paste, and all spices until smooth.
  2. Add chicken pieces and coat thoroughly. Cover and refrigerate for at least 4 hours or overnight.
  3. Preheat grill to medium-high heat and soak wooden skewers in water for 30 minutes if using.
  4. Thread marinated chicken onto skewers, leaving space between pieces.
  5. Grill for 10–15 minutes, turning occasionally, until fully cooked and slightly charred (internal temp 75°C).
  6. Remove from grill, let rest a few minutes, and garnish with chopped parsley before serving.

  • Marinate overnight for best flavor.
  • Chicken breasts can be used but may be less juicy.
  • Add vegetables like peppers or onions to skewers.
  • Can be baked or cooked on a grill pan if no grill is available.
