Ingredients

  • 45 Granny Smith apples
  • 2 cups white sugar
  • 1/2 cup water
  • 1 tsp lemon juice
  • Red food coloring (optional, for festive color)
  • Lollipop sticks
  • Candy thermometer

Instructions

  1. Peel apples and use a melon baller to scoop out small apple balls.
  2. Soak apple balls in salted water to prevent browning. Pat dry and place on a parchment-lined tray.
  3. Insert lollipop sticks into each apple ball. Freeze for 15 minutes to firm.
  4. In a saucepan, combine sugar, water, lemon juice, and food coloring. Bring to a boil, stir once, then cook until mixture reaches 300–310°F (hard crack stage) on a candy thermometer.
  5. Working quickly, dip each apple ball into hot candy to coat evenly. Place on parchment paper to set.
  6. For faster setting, chill briefly in the freezer. Serve once hardened.

Notes

  • Use Granny Smith apples for tartness, or try Honeycrisp or Fuji for a sweeter bite.
  • Add a drop of cinnamon or vanilla extract to the candy for extra flavor.
  • Change up food coloring for seasonal looks (green, purple, or orange for Halloween).
  • Sprinkle crushed nuts or colorful sprinkles onto dipped apples before the candy sets for decoration.
  • Avoid airtight containers to prevent condensation making the candy sticky.
