Ingredients

  • 350 g apples (about 3 large apples)
  • 2 tablespoons brown sugar
  • 2 teaspoons cornstarch
  • 1 tablespoon cinnamon
  • 2 teaspoons white miso paste
  • 1 sheet ready-rolled puff pastry
  • 1 egg
  • 1 tablespoon milk or water
  • Powdered sugar for dusting (optional)
  • 1/3 cup tahini paste
  • 1/3 cup date syrup
  • Flaky sea salt, to taste
  • Water to thin (if needed)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin.
  2. Chop apples into small chunks and add to a saucepan with brown sugar, cornstarch, cinnamon, miso paste, and a splash of water.
  3. Cook over medium heat for about 8 minutes, until apples are softened and the mixture thickens.
  4. Roll out the puff pastry and cut into squares large enough to fit each muffin cavity.
  5. Press pastry squares into the muffin tin and fill with the apple mixture. Optionally, top with pastry cut-outs.
  6. Beat egg with milk or water for egg wash and brush over pastry edges.
  7. Bake for 20–25 minutes until golden and puffed. Cool slightly.
  8. In a bowl, whisk together tahini, date syrup, and flaky sea salt. Add water as needed to reach a drizzle consistency.
  9. Dust bites with powdered sugar (optional) and serve warm with tahini caramel drizzle or dipping sauce.
