Ingredients

  • 1/2 cup (113 g) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1/2 teaspoon pure peppermint extract
  • 1 2/3 cups (about 210 g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 to 1 1/2 cups mint chips and/or chocolate chips (or chopped mint-chocolate candies)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in egg and peppermint extract until fully combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry mixture to wet ingredients, mixing just until combined.
  6. Fold in mint chips and/or chocolate chips, reserving a few for topping if desired.
  7. Scoop tablespoon-sized portions of dough and place 2 inches apart on the baking sheet.
  8. Bake for 9–11 minutes, until edges are lightly golden and centers appear slightly soft.
  9. Optionally press extra chips on top while warm, then let cookies cool on the sheet for 1 minute.
  10. Transfer cookies to a wire rack to cool completely.

Notes

  • For extra chewiness, slightly underbake the cookies and let them set while cooling.
  • Add a few drops of green food coloring to the dough for a festive look.
  • You can mix mint and chocolate chips, or use chopped mint-chocolate candies.
  • Chill dough for thicker cookies and better flavor.
  • Cookies are best eaten within a few days but can be frozen for longer storage.
