Ingredients

  • 1 unbaked 9-inch pie crust
  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 3 tbsp unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 1/2 cups pecan halves
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Place the pie crust into a 9-inch pie dish, pressing it into the edges and crimping the sides if desired. Set aside.
  2. In a large bowl, whisk together corn syrup, sugar, melted butter, eggs, cocoa powder, vanilla extract, and salt until smooth and well combined.
  3. Stir in the pecan halves and chocolate chips until evenly distributed.
  4. Pour the mixture into the prepared pie crust, spreading evenly. Arrange some pecans on top for presentation.
  5. Bake for 50–60 minutes, or until the center is mostly set with a slight jiggle. Cover crust edges with foil if they brown too quickly.
  6. Remove from oven and cool completely on a wire rack to allow the filling to firm up before slicing.
  7. Serve plain, with whipped cream, or a scoop of vanilla ice cream for extra indulgence.

Notes

  • A slightly jiggly center when removing from the oven is normal — it will set as it cools.
  • Add 1–2 tbsp of bourbon for a smoky flavor twist.
  • Use dark chocolate chips for a richer chocolate profile.
  • For a gluten-free version, use a gluten-free pie crust.
  • To store, cover and keep at room temperature for up to 2 days, or refrigerate for up to 5 days.
  • Reheat slices in a 300°F oven for 10 minutes or microwave for 20–30 seconds to restore the gooey texture.
