Ingredients

  • 1 (16-ounce / 450 g) jar roasted red bell peppers, drained and patted dry (or 3 medium/large fresh red bell peppers)
  • 1 cup (112 g) walnuts
  • 1/2 cup (40 g) panko, fresh, or fine breadcrumbs
  • 1 large clove garlic, chopped (or 2 small cloves)
  • 3 tablespoons extra virgin olive oil, plus more for drizzling
  • 2 tablespoons pure pomegranate molasses
  • 1/2 tablespoon freshly squeezed lemon juice
  • 12 teaspoons Aleppo pepper
  • 1/2 teaspoon ground cumin
  • 1 teaspoon kosher salt (or heaping 1/2 teaspoon sea salt)
  • Optional for serving: chopped fresh mint or parsley, pomegranate seeds, chopped toasted walnuts

Instructions

  1. Drain jarred red peppers (do not rinse) and pat them dry thoroughly. Tear into pieces and set aside.
  2. Set aside 1–2 walnuts and finely chop for garnish.
  3. In a dry skillet over medium heat, toast walnuts for about 3 minutes, stirring until fragrant.
  4. Add breadcrumbs and toast for another 3 minutes, stirring frequently. Remove from heat.
  5. Transfer walnut–breadcrumb mixture and garlic to a food processor. Blend until fine crumbs form.
  6. Add roasted peppers, olive oil, pomegranate molasses, lemon juice, Aleppo pepper, cumin, and salt.
  7. Pulse until mostly smooth but still slightly chunky. Adjust seasoning to taste.
  8. Spoon onto a serving plate, swirl with a spoon, drizzle with olive oil, and garnish with optional toppings. Serve with warm pita or crackers.

  • Use gluten-free breadcrumbs or extra walnuts for a gluten-free version.
  • Toast walnuts to remove bitterness and enhance flavor.
  • For a spicier dip, increase Aleppo pepper or add chili flakes.
  • Blend fully for a smoother texture or pulse for a rustic one.
