Ingredients
1 medium russet potato (about 10 ounces), peeled and cut into 3/4-inch chunks (about 2 cups)
1 tablespoon salted butter
2 teaspoons grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt, plus more to taste
1/4 teaspoon freshly ground black pepper, plus more to taste
Instructions
Preheat the oven to 400°F (200°C).
In an oven-safe 8- or 9-inch skillet over medium heat, melt the butter. Stir in Parmesan, garlic powder, paprika, salt, and pepper until combined.
Add the potato chunks and toss until evenly coated. Spread the potatoes in a single layer in the skillet.
Transfer the skillet to the oven and roast for 15 minutes.
Remove the skillet, flip the potatoes, and roast for another 15 minutes, until crispy and golden.
Remove from oven and season with additional salt and pepper to taste. Serve warm.
Notes
Use Yukon gold or red potatoes if preferred—just cut them to the same size.
Add smoked paprika or onion powder for variation.
Top with chopped fresh herbs like parsley or dill after roasting.
Sprinkle more Parmesan while hot for extra cheesiness.
Don’t overcrowd the skillet—this helps the potatoes crisp up.
