Ingredients

  • 1/2 cup creamy all-natural peanut butter
  • 1/4 cup coconut butter (not coconut oil)
  • 2 tablespoons maple syrup or raw honey
  • 3 tablespoons unsweetened cacao powder, sifted

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together peanut butter, coconut butter, and maple syrup or honey until smooth.
  3. Add sifted cacao powder and stir until a cohesive dough forms.
  4. Scoop out spoonfuls of dough and roll into small balls.
  5. Place balls onto the prepared baking sheet.
  6. Use a fork to gently press and flatten each ball into a cookie shape.
  7. Freeze for at least 30 minutes to firm up.
  8. Transfer to an airtight container and store in the fridge or freezer until ready to eat.

Notes

  • Do not substitute coconut oil for coconut butter; the texture won’t set properly.
  • Use a splash of vanilla for enhanced flavor.
  • For nut-free, swap peanut butter with sunflower seed butter.
  • Add-ins like chopped nuts or coconut flakes add texture.
  • Best enjoyed chilled as they soften at room temperature.
