Ingredients

1 cup butter

½ cup packed brown sugar

1 teaspoon vanilla extract

3 cups quick‑cooking oats

1 cup semisweet chocolate chips

½ cup peanut butter

Instructions

  1. Grease a 9‑inch square pan.
  2. In a saucepan over medium heat, melt butter. Stir in brown sugar and vanilla until combined.
  3. Add oats and cook over low heat for 2–3 minutes until well mixed.
  4. Press half of the oat mixture into the prepared pan to form the base; set the remaining mixture aside for the topping.
  5. In a small saucepan over low heat, melt chocolate chips and peanut butter together, stirring until smooth.
  6. Pour the chocolate‑peanut butter mixture over the oat base and spread evenly.
  7. Crumble the reserved oat mixture over the chocolate layer and gently press down.
  8. Cover and refrigerate for 2–3 hours (or overnight) until firm.
  9. Allow to come to room temperature before cutting into approximately 32 bars.

Notes

  • Use quick‑cooking oats for optimal texture; rolled oats work too but give a chewier bite.
  • Try dark or milk chocolate chips instead of semisweet.
  • Add a sprinkle of sea salt on the chocolate layer for contrast.
  • Mix in chopped nuts or shredded coconut for extra texture and flavor.
