Ingredients

  • 2 ¾ cups quick oats
  • ⅓ cup coconut oil, unmelted and packed
  • ⅓ cup maple syrup
  • 2 tablespoons coconut sugar
  • ¼ teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chips
  • ½ cup natural peanut butter

Instructions

  1. Line an 8×8-inch square pan with parchment paper and lightly grease with coconut oil. Set aside.
  2. In a non-stick saucepan over medium heat, add coconut oil, maple syrup, and coconut sugar. Stir until the mixture simmers and sugar dissolves.
  3. Remove from heat and stir in vanilla extract.
  4. In a large bowl, combine oats and sea salt. Pour the warm liquid over the oats and mix until evenly coated.
  5. Press about half of the oat mixture firmly into the bottom of the prepared pan. Reserve at least ½ cup for topping. Refrigerate the pan.
  6. In another saucepan over low to medium heat, melt chocolate chips and peanut butter, stirring until smooth.
  7. Remove the pan from the fridge and spread the chocolate peanut butter mixture over the oat base evenly.
  8. Sprinkle the reserved oat mixture on top and press down gently.
  9. Refrigerate overnight or until fully set. Once firm, remove from the pan and cut into 16 bars.
