Ingredients

250g Lotus Biscoff cookies (plus extra for garnish)

100g unsalted butter, melted

450g cream cheese, softened

240ml heavy cream

100g brown sugar

1 tsp vanilla extract

100ml caramel sauce

150ml chocolate ganache

Whipped cream (for garnish)

Whole Lotus Biscoff cookies (for decoration)

Instructions

  1. Crush the Lotus Biscoff cookies into fine crumbs and mix with melted butter until well combined.
  2. Press the mixture firmly into the bottom of a square baking pan to form an even crust. Refrigerate for 30 minutes to set.
  3. In a mixing bowl, beat together cream cheese, heavy cream, brown sugar, and vanilla extract until smooth and creamy.
  4. Spread half of the cream mixture over the chilled crust.
  5. Drizzle caramel sauce over the cream layer and sprinkle with crushed Biscoff cookies.
  6. Top with the remaining cream mixture and smooth out the surface. Refrigerate for at least 2 hours to set.
  7. Once set, pour cooled chocolate ganache over the top, letting it drip down the sides.
  8. Decorate with whipped cream and whole Biscoff cookies.
  9. Slice into squares and serve chilled.
