Ingredients

  • 8 ounces Medjool dates, pitted
  • Boiling water (enough to cover dates)
  • 1/2 teaspoon ground cardamom or ground cinnamon
  • 1/4 cup tahini
  • 2 tablespoons tahini (for topping)
  • 2 tablespoons refined coconut oil, melted
  • Pinch flaky sea salt (optional)

Instructions

  1. Place pitted Medjool dates in a bowl and cover with boiling water. Let soak for 15 minutes, then drain well.
  2. In a food processor, combine soaked dates and cardamom or cinnamon. Pulse until smooth and well combined.
  3. In a small bowl, whisk together tahini and melted coconut oil until smooth and pourable.
  4. Line a mini muffin tin with 10 paper liners. Spoon about 1/2 tablespoon of the tahini mixture into each liner and tap gently to level. Freeze for 15 minutes.
  5. Remove from freezer and add about 1 teaspoon of the date mixture on top of each base. Gently press into an even layer with damp fingers.
  6. Top each with remaining tahini mixture and sprinkle with flaky sea salt if using.
  7. Return to freezer for another 15 minutes or until fully set. Serve directly from the freezer or slightly thawed.
