Ingredients

  • 2 cups (200 g) rolled oats, chopped or blended into a coarse flour
  • 1 teaspoon baking powder
  • 1 cup (240 ml) milk of your choice (almond, oat, or dairy)
  • 1 medium carrot, grated
  • 1 medium apple, grated
  • 9 dried apricots, rinsed and finely chopped
  • 4 tablespoons raisins, rinsed

Instructions

  1. Preheat oven to 350°F (175°C). Line a small baking dish or loaf pan with parchment paper or grease lightly.
  2. Pulse rolled oats in a blender or food processor until they resemble coarse flour.
  3. In a large bowl, mix oat flour and baking powder.
  4. Add grated carrot, grated apple, chopped apricots, and raisins. Mix well.
  5. Pour in the milk and stir until fully combined. Batter will be thick.
  6. Transfer the batter to the prepared pan and smooth the top.
  7. Bake for 35–40 minutes, or until golden and a toothpick inserted comes out clean.
  8. Let cool completely before slicing. Serve warm or at room temperature.
