Ingredients

  • 1 cup firmly packed brown sugar
  • 1 cup unsalted butter, softened
  • ¼ cup water
  • 2½ cups uncooked old-fashioned rolled oats (or quick-cooking oats)
  • 1¼ cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup powdered sugar
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon butter, softened
  • 3 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C). Line cookie sheets with parchment paper.
  2. In a large bowl, beat brown sugar and softened butter at medium speed until creamy. Add water and mix well.
  3. Reduce mixer speed to low and add oats, flour, cinnamon, baking soda, and salt. Mix until well combined.
  4. Shape dough into 1½-inch balls and place 2 inches apart on prepared cookie sheets.
  5. Flatten each dough ball with a greased and sugared glass bottom or spatula to about 2 inches in diameter.
  6. Bake for 12 to 15 minutes, until lightly golden. Let sit on the baking sheet for 1 minute, then transfer to a wire rack to cool completely.
  7. For the chocolate drizzle, mix powdered sugar, cocoa powder, and butter in a bowl. Gradually add milk, beating until smooth and drizzle-ready.
  8. Drizzle the chocolate over cooled cookies using a spoon, piping bag, or zip-top bag with a snipped corner.
  9. Allow drizzle to set completely before serving or storing. Let cookies sit out overnight for chocolate to harden if needed.

Notes

  • No eggs needed—perfect for those with allergies or dietary preferences.
  • Flattening the dough ensures even baking and crisp edges.
  • Allow cookies to cool fully before adding the drizzle for best results.
  • Cookies can be frozen with or without the drizzle.
  • Customize easily with nuts, chocolate chips, or dried fruit.
