Ingredients

  • 2 large eggs, at room temperature
  • 3/4 cup granulated sugar
  • 1/3 cup neutral vegetable oil
  • 1 cup whole milk, at room temperature
  • Zest of 1 medium lemon
  • 2 tablespoons fresh lemon juice
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 pinch salt

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9-inch round cake pan.
  2. In a large mixing bowl, whisk together eggs and sugar until smooth and slightly pale.
  3. Add oil, milk, lemon zest, and lemon juice. Whisk to combine.
  4. Add flour, baking powder, and salt. Gently fold into the wet ingredients just until combined.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Do not overmix the batter to keep the cake tender.
  • For a richer cake, substitute half of the milk with plain yogurt.
  • Top with a lemon glaze made from powdered sugar and lemon juice for extra flavor.
  • Add berries or nuts for variety.
  • Best enjoyed fresh but also keeps well for a few days.
