Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 ounces penne pasta
  • 4 cups chicken broth
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken, Cajun seasoning, garlic powder, salt, and pepper. Cook for 5–7 minutes, stirring occasionally, until browned and cooked through.
  2. Add penne and chicken broth. Bring to a boil, reduce heat, cover, and simmer for 10–12 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed.
  3. Stir in spinach and heavy cream. Cook 2–3 minutes until spinach wilts.
  4. Remove from heat and stir in Parmesan, mozzarella, and feta until melted and creamy.
