Ingredients

  • For the Streusel: 1/2 cup all-purpose flour, 1/3 cup granulated sugar, 1 tsp ground cinnamon, 1/4 cup unsalted butter (cold, cubed)
  • For the Bread: 2 cups all-purpose flour, 1 tsp baking soda, 1/2 tsp salt, 1 large egg, 1/2 cup packed brown sugar, 1/4 cup granulated sugar, 1 cup buttermilk, 1/3 cup vegetable oil (or melted coconut oil), 1 tsp pure vanilla extract, 1 tbsp orange zest, 1 1/2 cups cranberries (fresh or frozen), optional: 1/2 cup chopped pecans or walnuts
  • For the Glaze: 1 cup confectioners’ sugar, 2–3 tbsp orange juice

Instructions

  1. Preheat oven to 350°F (177°C). Grease a 9×5-inch loaf pan with nonstick spray.
  2. Make streusel: Mix flour, sugar, and cinnamon. Cut in butter until pea-sized crumbs form. Chill until needed.
  3. Mix dry ingredients: In a large bowl, whisk flour, baking soda, and salt.
  4. Mix wet ingredients: In another bowl, whisk egg, brown sugar, granulated sugar, buttermilk, oil, vanilla, and orange zest.
  5. Pour wet mixture into dry ingredients. Stir until just combined. Fold in cranberries and nuts (if using).
  6. Pour batter into loaf pan, top with streusel. Bake 45–60 minutes, covering loosely with foil halfway through. Bread is done when a toothpick comes out clean.
  7. Cool completely in pan on a wire rack.
  8. Glaze: Mix confectioners’ sugar and orange juice until smooth. Drizzle over cooled bread before slicing.

Notes

  • Skip streusel and glaze for a simpler version.
  • Make as muffins: Bake at 425°F for 5 minutes, then reduce to 350°F for 15–17 minutes.
  • Substitute raspberries or blueberries for cranberries.
  • Soak dried cranberries in orange juice if using instead of fresh/frozen.
