Ingredients

  • 1.2 lb (550 g) ground beef
  • 1/2 cup (60 g) breadcrumbs
  • 1/3 cup (80 ml) milk
  • 1 egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup (60 ml) ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1.5 lb (700 g) potatoes, cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup (60 ml) ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon mustard

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a baking dish.
  2. Combine breadcrumbs and milk in a bowl and let soak for 2 minutes.
  3. Add ground beef, egg, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, oregano, and parsley. Mix gently.
  4. Shape mixture into a loaf and place in the center of the dish.
  5. Toss potatoes with olive oil, paprika, garlic powder, salt, and pepper, then arrange around the meatloaf.
  6. Mix ketchup, brown sugar, and mustard, then spread over the meatloaf.
  7. Bake for 55–60 minutes until the meatloaf reaches 160°F (71°C).
  8. Let rest for 10 minutes before slicing and serving with potatoes.
