Ingredients

2 pounds (about 3 large) orange-fleshed sweet potatoes

3 tablespoons extra-virgin olive oil

1½ teaspoons kosher salt

Instructions

  1. Preheat oven to 450°F (or up to 500°F for extra crispiness). Place a heavy baking sheet inside to heat.
  2. Peel sweet potatoes, trim ends, and cut into ¼ to ½‑inch thick wedges or rounds.

  4. Carefully remove the hot baking sheet and spread fries out in a single layer.
