Ingredients

90g strong flour (bread flour)

55g milk

10g melted unsalted butter

A pinch of salt

1 medium-sized potato

2 tablespoons mayonnaise

Mozzarella cheese, as desired

Honey, for drizzling

Instructions

  1. Peel and grate the potato. In a bowl, mix the grated potato with 2 tablespoons of mayonnaise, ensuring it’s well combined.
  2. In a mixing bowl, combine 90g strong flour, 55g milk, 10g melted unsalted butter, and a pinch of salt. Mix until the dough begins to come together, then knead until smooth and elastic.
  3. Divide the dough into two equal pieces and roll each piece into a flat round. Spread the potato mixture on one round, leaving a small border around the edges. Top with mozzarella cheese, then place the second dough piece over the top. Press the edges to seal.
  4. Heat a non-stick pan over medium heat and cook the bread, covered, for about 5 minutes on each side, until golden brown and the cheese has melted inside.
  5. Drizzle honey over the bread and cut into slices. Serve warm for the best flavor.

Notes

  • For a different flavor, experiment with adding other cheeses like cheddar, gouda, or a spicy pepper jack.
  • To make it vegan, substitute dairy ingredients with plant-based alternatives like dairy-free butter and vegan mozzarella.
  • For a spicy twist, add chili flakes or diced jalapeños to the potato filling.
