Ingredients

  • 4 rainbow trout fillets (4 to 6 ounces each)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter
  • 5 cloves garlic, finely minced
  • 1 tablespoon fresh parsley, finely chopped

Instructions

  1. Pat the rainbow trout fillets dry with paper towels. Season both sides with salt and pepper, then rub with lemon juice.
  2. Heat olive oil in a large non-stick or cast iron skillet over medium heat.
  3. Place the fillets flesh-side down in the pan and press gently for good contact. Cook for 3–4 minutes until golden.
  4. Flip the fillets carefully and cook for another 2 minutes.
  5. Add butter and garlic to the pan. Spoon the melted garlic butter over the fish as it finishes cooking.
  6. Sprinkle with chopped parsley and cook until the fish flakes easily with a fork.
  7. Remove from heat and drizzle with remaining garlic butter from the pan before serving.
