Instructions

  1. Pound chicken breasts to even thickness and pat dry.
  2. Season both sides with salt, pepper, garlic powder, and paprika.
  3. Set up three dishes: one with flour, one with beaten eggs, and one with Parmesan mixed with minced garlic.
  4. Dredge chicken in flour, then dip in egg, then press into Parmesan mixture to coat thoroughly.
  5. Heat olive oil in a skillet over medium heat.
  6. Cook chicken for 5–6 minutes per side, or until golden brown and cooked through (internal temp 165°F / 74°C).
  7. Remove from skillet, garnish with parsley if desired, and serve warm.
