1/2 cup honey

1/4 cup mini chocolate chips

1/4 cup unsweetened shredded coconut

Instructions

  1. In a medium bowl, combine oats, peanut butter, honey, chocolate chips, and shredded coconut.
  2. Mix thoroughly until all ingredients are well combined and no dry oats remain.
  3. Using a 1-tablespoon measure, scoop and roll the mixture into balls.
  4. Place rolled balls on a parchment-lined baking sheet and refrigerate until firm.
  5. Store in an airtight container in the refrigerator or freezer.

Notes

  • Swap mini chocolate chips for chopped dark chocolate for a richer flavor.
  • Add ground cinnamon for a warm spice note.
  • Use maple syrup instead of honey for a different sweetness profile.
  • Incorporate chopped dried fruit for a fruity twist.
  • For added nutrition, mix in chia seeds, flaxseed meal, or protein powder.
