Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • ¼ cup unsweetened cocoa powder
  • ½ cup brewed coffee, cooled
  • 1 tsp peppermint extract
  • 1 tsp vanilla extract
  • ½ cup crushed peppermint candies (plus more for garnish)

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Mix graham cracker crumbs and melted butter. Press into the pan to form the crust. Bake for 10 minutes, then cool.
  3. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in sour cream, cocoa powder, brewed coffee, peppermint extract, and vanilla extract until fully combined.
  6. Pour batter over the cooled crust. Tap the pan gently to release air bubbles.
  7. Bake for 55–60 minutes, until edges are set and center jiggles slightly.
  8. Cool at room temperature, then refrigerate for at least 4 hours or overnight.
  9. Before serving, top with whipped cream and sprinkle with crushed peppermint candies.
