Ingredients

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a rectangular baking pan with parchment paper, leaving an overhang.
  2. In a bowl, mix digestive biscuit crumbs, melted butter, and granulated sugar until the texture resembles wet sand.
  3. Press the mixture evenly into the bottom of the pan. Bake for 10 minutes, then set aside to cool slightly.
  4. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  5. Add eggs one at a time, beating well after each addition.
  6. Mix in vanilla extract, sour cream, and lemon zest (if using) until fully incorporated.
  7. Pour the cheesecake filling over the crust and smooth the top.
